During Seattle Restaurant Week 2025, Project Feast invites you to experience a menu that highlights the warmth and richness of Afghan cuisine – lovingly prepared by our talented culinary graduates.
Kabuli Pulau
Afghanistan’s national treasure – fragrant basmati rice layered with carrots, raisins, and delicate spices.
Choose from succulent lamb or a vegetarian delight featuring golden potatoes and garbanzo beans.
A dish that embodies comfort, tradition, and celebration.
Borani Banjan
Layers of eggplant simmered in a savory tomato sauce with peppers and onions, topped with cool, creamy garlic yogurt.
A vibrant favorite that’s both hearty and refreshing.
Firni
A luscious Afghan custard dessert, delicately flavored with cardamom and finished with a sprinkle of crushed pistachios.
Sweet, aromatic, and the perfect finale to your feast.
